Scope overview
Im Rahmen einer Erweiterung der GGS Morsbroicher Straße 14 in Leverkusen beabsichtigt die Stadt Leverkusen, eine Mensaküche zu errichten. Die Schüler werden aus der Mensaküche mit warmer Mittagsverpflegung, Komplettmenüs bzw. Menükomponenten verpflegt.
Die Küche ist als Regenerier- / Aufwärmküche für das Verpflegungskonzept Cook-Chill, Regeneration von Kühlmenükomponenten, mit geringer Teilfertigung von Frischkomponenten, ausgelegt. Die Einrichtung wird zur Verpflegung von Schülern genutzt. In der Küche werden Lebensmittel regeneriert und ausgegeben. Die Hauptproduktion der Speisen erfolgt in einer nicht bekannten Zentralproduktion.
Die Planung der Relaisküche wird den Anforderungen der entsprechenden gesetzlichen Grundlagen für die jeweiligen Bereiche, insbesondere der Lebensmittel-Hygiene-VO, den allgemeinen Hygiene-Richtlinien, der Arbeitsstätten-VO, der DIN- und VDI-Vorschriften, der BGRegeln BGR 111 und der Forderungen aus dem HACCP (Hazard Analysis Critical Control Points), gerecht.
